Chef Alberto Bessi, of Fanano, Italy, spent the past week in Fairbanks, and, after the eye-opening experience, he is planning to visit next year. When he was asked about his experience with cooking moose meat and eating it, the chef's eyes widened and a smile crossed his face. With only a small grasp of the English language, he spoke through his translator. He said it was great meat, and he'd love to cook moose for people in Italy.
Bessi is not only a professional chef, but also he teaches at the Culinary Institute of Hotels and Restaurants in Italy. And he brought his expertise to Fairbanks to teach cooking at the Fairbanks Summer Arts Festival. Bessi taught two courses of Alaska-infused Italian on Thursday and Friday.
