And for those who can’t get enough of this oft-misunderstood treat, or even one who is interested in trying their first-ever plate of gourmet cow’s stomach lining, our hosts are heading to the Italian Tribune’s Annual Tripe and Neck Bone Dinner, where publisher (and dinner founder) Buddy Fortunato and over 120 guests will celebrate their love for trippa, and some of the other lesser-appreciated cuts of meat, at Mamma Vittoria Catering in Nutley, NJ.
